Lock's
Salmon Burritos
2 - 6 to 8 ounce salmon
fillets ¼ teaspoon dill ¼ teaspoon black pepper ¼ teaspoon garlic powder Olive oil ¼ cup Lock's Bar-B-Q
Sauce
Also: 4 tablespoons Mexican blend
cheese 3 tablespoons brown rice 3 tablespoons whole kernel corn
(cooked) 3 tablespoons rinsed, drained
canned black beans ½ large vine-ripened tomato,
seeded and diced 2 tablespoons onion, diced (red
onion or sweet onion) ½ avocado, diced 2 tortillas
To prepare the salmon:
Preheat broiler and spray
broiling pan with olive oil.
Season salmon fillets on both
sides with dill, black pepper and
garlic powder. Cook for 10
minutes on each side. (Check for
doneness, depending upon
thickness of the fish.) Brush
with Lock's Bar-B-Q Sauce and
return to the broiler. Cook for
an additional 5 minutes.
Warm tortillas in the oven on a
cookie sheet at 250 degrees for 3
minutes. Place tortillas on a
clean, flat surface. Divide rice,
corn and beans between both
tortillas.
Add tomatoes and onions. Sprinkle
each with 2 tablespoons cheese.
Fold up the bottom quarter of
each tortilla and roll away from
you, tucking in the sides as you
go. Serve seam side down. Drizzle
with additional Lock's Bar-B-Q
Sauce. Serve with salsa. Serves
2.

buy the crust mix, put on cookie
sheet I butter it put in oven to
cook it till its golden brown
then remove.
spread pizza sauce and then mix
in Lock's Bar-B-Q Sauce (4 - 8
tablespoons) depending how strong
you want the flavor over the
crust
then add toppings
pound of hamburger pre cooked or
pre cooked chicken(diced up) your
choice
pound of bacon fry it up and
add Canadian bacon chopped onions pepperoni optional ingredients green
pepper, mushrooms
mozzarella 16 oz and cheddar
cheese 16 oz or add more if you
like it real cheesy
then put in the oven 350 to 400
till cheese melts good ...time
various to your liking

Lock's Bar-B-Q Pork
Patties Larry E. Cook - St. Louis,

3lb-8oz Ground Pork 5oz Bread Crumbs 4 medium eggs 2oz diced fresh yellow onions 1 tsp salt 1/4 tsp ground black pepper 1 tsp granulated garlic 1/4 tsp oregano leaves 1/4 tsp ground thyme 1-1/2 cup homogenized milk
Combined all ingredients. Mix by
hand. Portion into 3oz patties.
Flatten slightly. May be broiled
on open flame or baked at 325 for
20-25 minutes.
Drain off grease. Transfer
patties to serving pan. Cover
with Lock's Bar-B-Q Sauce and
return to oven for 10-15
minutes.

Lock's Bar-B-Q Beef
Brisket Larry E. Cook - St. Louis,
MO
Preheat oven to 350. Rinse
brisket under cold water. Place
meat in roasting pan. Season with
onion powder, garlic powder and
rosemary leaf. Brown meat
uncovered in roasting pan with a
small amount of water in bottom,
1-1 1/2 hour depending on weight.
After meat is brown lower oven to
325. Add water if needed, cover
and continue baking until "fork
tender"
Remove brisket and cool slightly.
Trim off any visible fat. Slice
brisket *ACROSS* the grain. add
warm Lock's Bar-B-Q
Sauce.......

I like to baste things while I
cook and pour on Lock's Bar-B-Q
Sauce at the last few
minutes.
1 QT Apple cider vinegar 2 tablespoons dark brown
sugar 1 tablespoon red pepper
flakes
mix well and let sit for at least
a week, it gets better with
time
use with ribs/chicken/pork
shoulder
sprinkle on meat while
cooking
